  • PAM® Original No-Stick Cooking Spray
  • 3 small frozen broccoli florets, chopped
  • 2 tablespoons finely chopped fresh carrot
  • 1 container (4 oz each) Egg Beaters® 100% Liquid Egg Whites
  • 2 tablespoons shredded Parmesan cheese, divided
  • Dash ground black pepper
  • Salsa, optional

  1. Spray inside of large microwave-safe mug with cooking spray. Add broccoli and carrot. Microwave on HIGH 30 seconds; blot vegetables dry with paper towel.
  2. Add Egg Beaters, 1 tablespoon cheese and pepper to mug; mix well.
  3. Microwave on HIGH 1 minute. Stir; microwave 30 seconds more or until set. Top with remaining 1 tablespoon cheese. Serve immediately with salsa, if desired.

Cook's Tip

The scrambler puffs up and fills the mug while cooking. It falls quickly once removed from microwave. Use a large (15-ounce) microwave-safe mug to hold the ingredients and to reduce the chance of overflow. Mugs that are wider and shorter work best. A 2-cup glass measure may be used as well. Microwave wattages vary; adjust cook time as needed. Cook the scrambler just until the egg is set.

I made it as follows : sprayed w/coconut cooking spray, used 3tablespoons broccoli slaw & 3cherry tomatoes halved, also added a pinch of dried basil. I cooked that 30 seconds then added egg whites & a pick of parm cheese & cracked black pepper. It only took 1 minute on high. I fluffed it with a fork & topped w/ 1 tablespoon medium chunky salsa. Pure Heaven in less than 3minutes!!! Next I 'll try it w/chopped red pepper., mushrooms, black olives & chopped scallions...endless possibilities!!!!!!

Gluten free! and leaving out the cheese, dairy free! A fast nutritious breakfast, includes protein that I can eat. Zestier with a dash of red hot sauce.

Sorry.......I was very disappointed. Egg mix did not expand as swown in recipe, just didn't turn out as expected.

Wow, that was so easy. I live in Australia so we don't have Egg Beaters, but I used a Pasteurised Egg White product. Breakfast on the go, will make again tomorrow morning for my husband.

I used chopped spinach and some salt and peeper, but no cheese. Easy enough to do at work for a quick and healthy snack.
