Ingredients

  • PAMĀ® Original No-Stick Cooking Spray
  • 3/4 cup Egg BeatersĀ® 100% Liquid Egg Whites
  • 1/8 teaspoon ground black pepper
  • 5 small fresh asparagus spears, trimmed, cooked
  • 1 slice (1 oz each) reduced fat Swiss cheese, cut in half diagonally

Directions

  1. Spray small nonstick skillet with cooking spray. Heat over medium-high heat until hot.
  2. Add Egg Beaters and cook 1 to 2 minutes or until Egg Beaters begin to set. Gently lift edges and tilt skillet to allow uncooked Egg Beaters to flow underneath. Repeat twice, cooking 2 to 3 minutes more or until Egg Beaters are set.
  3. Sprinkle inside of omelet with pepper; top half of omelet with asparagus and Swiss cheese. Fold remaining half of omelet over filling. Serve immediately.

Cook's Tip

Using leftover cooked asparagus saves time on busy mornings. Or, microwave spears sprinkled with water, covered, on HIGH for 45 to 60 seconds or until crisp-tender. Shredded Swiss cheese may also be used.
