Ingredients

  • PAM® Original No-Stick Cooking Spray
  • 24 wonton wrappers
  • 3/4 cup Egg Beaters® Original
  • 1/3 cup crumbled goat cheese
  • 2 tablespoons oil-packed dried tomatoes, drained, finely chopped

Directions

  1. Preheat oven to 375°F. Spray miniature muffin cups with cooking spray. Gently press 1 won ton wrapper into each muffin cup allowing edges to extend above edges of cups.
  2. Combine Egg Beaters, goat cheese and tomatoes in small bowl. Spoon mixture evenly into wonton wrapper cups. Spray edges of wrappers lightly with cooking spray.
  3. Bake 10 minutes, or until set. Serve warm or at room temperature.

I made this recipe for Christmas brunch as a healthy alternative. Everyone loved it. My husband just asked for them again but I didn't have goat cheese so I used feta and I added some cooked crumbled bacon. You could vary this up with your cheeses and extras that you like. Super easy to make too.
