- PAMŪ Professional™ No-Stick Cooking Spray
- 2/3 cup cake flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon kosher salt
- 1/2 cup Egg BeatersŪ Garden Vegetable
- 2 tablespoons fat free milk
- 2 tablespoons finely chopped fresh jalapeno pepper
- 1/2 cup shredded reduced fat Cheddar cheese

| Directions | - Preheat oven to 425°F. Spray 12 mini muffin cups with cooking spray; set aside.
- Combine cake flour, baking powder and salt in medium bowl; set aside. In second bowl, combine Egg Beaters, milk and jalapeno pepper.
- Pour Egg Beaters mixture into flour mixture; mix just until moistened. Stir in cheese.
- Spoon batter evenly into prepared muffin cups. Bake 8 to 10 minutes or until wooden pick inserted in center of popper comes out clean. Serve warm.

| Cook's Tips | - Cake flour is recommended to give poppers the best texture. If you do not have cake flour on hand, all-purpose flour can be substituted.A mini scoop can be used to fill each mini muffin cup.
