Ingredients

  • PAM® Original No-Stick Cooking Spray
  • 2/3 cup cake flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon kosher salt
  • 1/2 cup Egg Beaters® Garden Vegetable
  • 2 tablespoons fat free milk
  • 2 tablespoons finely chopped fresh jalapeno pepper
  • 1/2 cup shredded reduced fat Cheddar cheese

Directions

  1. Preheat oven to 425°F. Spray 12 mini muffin cups with cooking spray; set aside.
  2. Combine cake flour, baking powder and salt in medium bowl; set aside. In second bowl, combine Egg Beaters, milk and jalapeno pepper.
  3. Pour Egg Beaters mixture into flour mixture; mix just until moistened. Stir in cheese.
  4. Spoon batter evenly into prepared muffin cups. Bake 8 to 10 minutes or until wooden pick inserted in center of popper comes out clean. Serve warm.

Cook's Tip

Cake flour is recommended to give poppers the best texture. If you do not have cake flour on hand, all-purpose flour can be substituted. A mini scoop can be used to fill each mini muffin cup.
