  • PAM® Original No-Stick Cooking Spray
  • 2 tablespoons Fleischmann's® Original-stick
  • 1 can (4 oz drained wt each) sliced mushrooms, drained
  • 1/2 cup chopped yellow onion
  • 24 thin round slices smoked ham (from 8 oz pkg)
  • 1/3 cup shredded Cheddar cheese
  • 1 carton (16 oz each) Egg Beaters® Original

  1. Preheat oven to 375°F. Generously spray 12 medium-size cups of muffin pan with cooking spray; set aside.
  2. Melt Fleischmann's in medium skillet over medium-high heat. Add mushrooms and onion; cook 4 minutes or until onion is tender; set aside.
  3. Line each muffin cup with 2 overlapping slices of ham, with edge just above rim of pan. Spoon mushroom mixture evenly into ham-lined cups. Top each evenly with cheese.
  4. Pour Egg Beaters evenly over mushrooms and cheese. Bake 20 minutes or until knife inserted in centers comes out clean. Let stand in pan 2 minutes. Run table knife around edge of bakes to loosen.

Cook's Tip

Make Ahead: Prepare egg bakes through step 4. Cover and refrigerate overnight. Reheat in 350°F oven 15 minutes or until hot.

I do something similar. I use green peppers,onion,fresh mushrooms,Turkey breakfast sausage finely chopped, Turkey Bacon and egg beaters. I mix it all up and pour into silicone muffin tins and bake. I make enough for 2 weeks of breakfasts and just microwave 2 each in the morning.

I first had these at my sisters house. She freezes them after they cool so that breakfast is ready to go in the morning. They keep their shape. Great grab and go!

This one really inspired me :). I looked in the frig & made my first ones with "on hand ingredients" thin sliced Turkey, onion, frozen spinach (thawed & drained), Cheese. had Egg Beaters yea :). Followed directions & how wonderful they are. Now I have breakfast for several days. I will just pop in microwave to reheat. Can't wait to share with my Weight Watcher Friends. mine were 2 pts plus per 2 muffins.
