  • 1 cup small fresh broccoli florets
  • 1/2 cup chopped cooked chicken breast
  • 1/4 cup finely chopped tomato
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon Italian seasoning
  • 1/8 teaspoon salt
  • 1 cup Egg Beaters® Original (1 cup = 8 oz)

Directions

  1. Preheat broiler. Spray medium ovenproof skillet with cooking spray; heat over medium heat. Add broccoli, chicken, tomato, onion, Italian seasoning and salt; cook and stir 3 minutes or until broccoli is crisp-tender.
  2. Add Egg Beaters. Reduce heat to low; cover. Cook 9 minutes or until frittata is almost set. Remove lid.
  3. Place skillet under broiler 2 minutes or until top is set, but not brown. Cut frittata in half to serve.

I really like this recipe and its a lot of food for only 3 WW points! I like my broccoli a little more "done" so I think I will microwave it before adding it to the pan next time but otherwise, great recipe!

I love this recipe!! It is my "go to" when I don't know what else to make. It is excellent as is, but also adaptable to anyone's taste! Easy, healthy and quick -- what could be better for dinner?
