  • 1/2 cup Egg Beaters® Original
  • 2 tablespoons shredded Cheddar cheese, divided
  • 1 tablespoon real bacon bits
  • 2 teaspoons sliced green onion
  • Dash ground black pepper

Directions

  1. Spray inside of large microwave-safe mug with cooking spray.
  2. Stir together Egg Beaters, 1 tablespoon cheese, bacon, onion and pepper in mug.
  3. Microwave on HIGH 1 minute. Stir; microwave 30 seconds more or until set. Top with remaining 1 tablespoon cheese. Serve immediately.

Cook's Tip

The scrambler puffs up and fills the mug while cooking. It falls quickly once removed from microwave. Use a large (15-ounce) microwave-safe mug to hold the ingredients and to reduce the chance of overflow. Mugs that are wider and shorter work best. A 2-cup glass measure may be used as well. Microwave wattages vary; adjust cook time as needed. Cook the scrambler just until the egg is set.

This is one of my favorite breakfasts. It is truly yummy. I have it at least 2 times a week.

We enjoyed this, but we added our own preferred chopped veggies only, and cooked 45 seconds after stirring to thoroughly cook eggs. Great idea for packed lunches for work, as well as breakfast!

I'll be honest, a real scrambled egg is better. But if low-calorie and healthy is what you're going for, which I am, this hits the spot!
