Mini Mocha Brownie Bites

Little sensational brownie bites recipe with a hint of coffee flavor

Ingredients:

  • PAM® Baking Spray
  • 1-1/2 cups granulated sugar
  • 1 cup Ultragrain® All Purpose Flour
  • 3/4 cup unsweetened cocoa powder
  • 3/4 cup Egg Beaters® Original
  • 1/2 cup Fleischmann's® Original-stick, melted (1/2 cup = 1 stick)
  • 1 tablespoon instant coffee granules
  • 1 tablespoon hot water
  • 1/2 cup confectioners' sugar

Ingredients (Continued):

  • 2 teaspoons instant coffee granules
  • 2 teaspoons unsweetened cocoa powder
  • 1 tablespoon hot water

Directions

  1. Make Brownie: Preheat oven to 350°F. Spray 8x8-inch glass baking dish with baking spray; set aside.
  2. Combine sugar, flour and cocoa powder in large bowl; set aside. In second bowl, whisk together Egg Beaters and Fleischmann's. Dissovle instant coffee in hot water in small bowl.
  3. Pour Egg Beaters mixture into flour mixture; add coffee. Stir together until blended, being careful not to overmix (there will be small lumps). Pour batter into prepared dish.
  4. Bake 35 minutes or until wooden pick inserted in center comes out nearly clean. Cool at least 1 hour. Cut into 36 mini squares; remove from dish.
  5. Make Glaze: Whisk together confectioners' sugar, instant coffee, cocoa powder and hot water in small bowl. Drizzle glaze over brownies.
